Ingredients:

  • 2 cups whole milk
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions:

  1. Prepare the Roux:
    • In a saucepan, melt the butter over medium heat.
    • Add the flour and whisk continuously to form a smooth roux.
  2. Make the Bechamel Sauce:
    • Gradually pour in the milk, whisking constantly to avoid lumps.
    • Continue to cook and stir until the mixture thickens to a smooth consistency.
    • Season with salt and pepper to taste.
  3. Cool the Mixture:
    • Allow the bechamel mixture to cool completely. You can transfer it to a bowl and refrigerate it for faster cooling.
  4. Shape the Croquettes:
    • Once the mixture is cool and firm, scoop out portions and shape them into small cylinders or oval shapes.
  5. Coat with Breadcrumbs:
    • Roll each croquette in beaten eggs, then coat it evenly with breadcrumbs. Ensure each croquette is well coated.
  6. Heat the Oil:
    • In a deep pan or fryer, heat vegetable oil to 350°F (180°C).
  7. Fry the Croquettes:
    • Carefully place the coated croquettes into the hot oil and fry until they turn golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
  8. Drain Excess Oil:
    • Once the croquettes are crispy and golden, use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
  9. Serve Warm:
    • Allow the crispy milk croquettes to cool slightly before serving. They can be enjoyed on their own or with a dipping sauce of your choice.
  10. Optional:
  • Garnish with fresh herbs or grated cheese before serving for added flavor.
