- Preheat Oven to 350°F (175°C). Lightly grease or line a 12-cup muffin tin.
- Cream Butter & Sugar: In a large bowl, beat the softened butter and sugar until light and fluffy.
- Add Wet Ingredients: Mix in the egg, milk, and vanilla extract until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
- Mix Together: Gradually add the dry ingredients to the wet mixture, stirring just until combined (do not overmix).
- Fill Muffin Tin: Divide the batter evenly among the 12 muffin cups, filling about 2/3 full.
- Bake: Bake for 15–18 minutes, or until a toothpick comes out clean.
- Coat with Cinnamon Sugar:
- While muffins are warm, dip each one in melted butter, then roll in cinnamon sugar until fully coated.
