Ingredients:
- 4 cod fillets (about 5–6 oz each)
- Salt & pepper, to taste
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can (14 oz) crushed tomatoes (or use fresh ripe tomatoes, chopped)
- Zest and juice of 1 lemon
- 1/4 tsp red pepper flakes (optional)
- 1 tsp dried oregano or Italian seasoning
- Fresh parsley or basil, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
- Season the cod:
Pat cod fillets dry and season both sides with salt and pepper. - Sear the cod:
Heat olive oil in a large skillet over medium-high heat.
Add the cod and sear for 2–3 minutes per side until golden. Remove and set aside (fish doesn’t need to be fully cooked yet). - Make the sauce:
In the same skillet, reduce heat to medium. Add butter, then sauté the garlic and onion until softened (about 3–4 minutes). - Add tomato and lemon:
Stir in crushed tomatoes, lemon juice, lemon zest, red pepper flakes, and oregano. Simmer uncovered for 8–10 minutes until slightly thickened. - Return cod to skillet:
Gently place the cod fillets back into the sauce. Spoon sauce over the top. Cover and simmer for another 5–7 minutes until the cod is fully cooked and flakes easily. - Serve:
Garnish with chopped parsley or basil. Serve with rice, pasta, crusty bread, or roasted vegetables.
