  • Vegetable oil for frying

1. Prep the tomatoes:

  • Slice green tomatoes into ΒΌ-inch thick rounds.
  • Lightly sprinkle with salt and let them sit for 5–10 minutes on paper towels to draw out moisture. Pat dry.

2. Set up a breading station:

  • In a shallow bowl, whisk together buttermilk and egg.
  • In another bowl, mix flour, cornmeal, breadcrumbs, salt, pepper, and paprika.

3. Bread the tomatoes:

  • Dip each tomato slice into the buttermilk mixture.
  • Then coat in the dry breadcrumb/cornmeal mix, pressing gently so it sticks.

4. Fry:

  • Heat Β½ inch of vegetable oil in a large skillet over medium-high heat until hot (about 350Β°F / 175Β°C).
  • Fry tomatoes in batches for 2–3 minutes per side or until golden brown and crispy.
  • Transfer to a plate lined with paper towels to drain excess oil.
