✅ Ingredients

For the Chicken:

  • 2 chicken breasts, sliced into strips
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp paprika
  • 1 tsp garlic powder

For the Cowboy Butter Sauce:

  • 6 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice (fresh)
  • 1 tsp smoked paprika
  • ½ tsp crushed red pepper flakes
  • 1 tbsp fresh parsley, chopped
  • 1 tsp thyme (dried or fresh)
  • ½ tsp cayenne pepper (optional for heat)
  • Salt and pepper, to taste

For the Pasta:

  • 300g linguine (about 10 oz)
  • Grated Parmesan cheese (for topping)
  • Extra parsley or green onions, for garnish

👨‍🍳 Instructions

1. Cook the Pasta:

  • In a large pot of salted water, cook linguine according to package directions.
  • Drain and set aside. Reserve ½ cup of pasta water.

2. Cook the Chicken:

  • In a skillet over medium-high heat, add olive oil.
  • Season the chicken strips with salt, pepper, paprika, and garlic powder.
  • Sauté for 5–6 minutes until golden brown and fully cooked. Remove and set aside.

3. Make the Cowboy Butter Sauce:

  • In the same pan, reduce heat to medium and add butter.
  • Once melted, stir in garlic and cook for 1 minute.
  • Add Dijon mustard, lemon juice, paprika, chili flakes, parsley, thyme, cayenne, salt, and pepper.
  • Let simmer gently for 2–3 minutes until aromatic.

4. Combine Everything:

  • Return chicken to the pan and coat in the cowboy butter sauce.
  • Add drained linguine and toss everything together.
  • Add a splash of reserved pasta water if the sauce needs thinning.

5. Serve:

  • Plate the linguine, top with extra parsley, and sprinkle with Parmesan cheese.
  • Serve hot with garlic bread or a fresh salad.

🔄 Variations:

  • Add spinach or sun-dried tomatoes for more veggies.
  • Swap chicken for shrimp or mushrooms for a different twist.
  • Use fettuccine or penne if you don’t have linguine.
