For the Beef Marinade:

  • 500 g (1 lb) beef sirloin or flank steak, thinly sliced against the grain
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp brown sugar or honey
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch

For the Stir-Fry:

  • 2 tbsp vegetable oil
  • 3–4 heads baby bok choy, halved lengthwise
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar (optional)
  • 1 tsp toasted sesame seeds
  • Green onions (sliced, for garnish)

🔥 Instructions:

  1. Marinate the Beef
    • In a bowl, combine soy sauce, oyster sauce, sesame oil, garlic, ginger, brown sugar, and cornstarch.
    • Add the beef slices and toss to coat.
    • Let marinate for 15–30 minutes (or up to 1 hour for deeper flavor).
  2. Cook the Beef
    • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
    • Add the beef in batches (don’t overcrowd) and cook for 2–3 minutes per side until browned and just cooked through.
    • Remove and set aside.
  3. Sauté the Bok Choy
    • In the same pan, add another tablespoon of oil.
    • Add bok choy cut-side down and cook for 2 minutes, then flip.
    • Drizzle with a little soy sauce and rice vinegar, and cook another 2–3 minutes until tender-crisp.
  4. Combine & Serve
    • Return beef to the pan and toss everything together for 1–2 minutes.
    • Sprinkle with toasted sesame seeds and green onions.

🍽️ Serving Ideas:

  • Serve over steamed jasmine rice or rice noodles.
  • Add a sprinkle of chili flakes or sriracha for spice lovers.
  • Perfect for meal prep — keeps well for up to 3 days in the fridge.
