Creamy Layered Delight: No-Bake Biscuit Pudding

Ingredients:

For the biscuit layers:

  • 2 packs of Marie biscuits or digestive biscuits
  • 1/2 cup milk (for dipping)
  • Optional: 1 tsp coffee or cocoa powder mixed into the milk for flavor

For the creamy custard:

  • 2 cups milk
  • 3 tbsp custard powder (vanilla or your choice)
  • 4 tbsp sugar (adjust to taste)
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream or condensed milk (optional for extra creaminess)

For the chocolate layer (optional but amazing):

  • 100g dark or milk chocolate, melted
  • 1/4 cup cream (for a ganache-style topping)

Garnish (optional but recommended):

  • Crushed biscuits
  • Chopped nuts or grated chocolate
  • A dusting of cocoa or cinnamon powder

‍ Instructions:

1. Make the custard:

  • Mix custard powder with a few tablespoons of milk to form a smooth paste.
  • Heat the rest of the milk with sugar in a saucepan.
  • Once warm, add the custard paste, stirring constantly to avoid lumps.
  • Cook until thickened (around 4–5 mins).
  • Add vanilla and cream/condensed milk if using. Let it cool slightly.

2. Dip and layer the biscuits:

  • Quickly dip each biscuit in the flavored milk (don’t soak too long!).
  • Place a layer of dipped biscuits in a rectangular or square dish.

3. Layer the pudding:

  • Pour a layer of custard over the biscuits and spread evenly.
  • Repeat layers: biscuits → custard → biscuits → custard.
  • Finish with a custard layer on top.

4. Optional chocolate topping:

  • Mix melted chocolate and cream to make a smooth ganache.
  • Pour over the top and spread gently.

5. Chill & Serve:

  • Refrigerate for at least 4 hours (overnight is best!).
  • Top with crushed biscuits, nuts, or cocoa before serving.

Tips & Variations:

  • Add a layer of sliced bananas or strawberries between the custard layers for fruity freshness.
  • Use flavored biscuits (like chocolate or coffee) for a fun twist.
