Instructions
- Prepare the crust
Preheat the oven to 180°C / 350°F.
Place the pie crust into a quiche or tart pan. Prick the bottom with a fork and pre-bake for 8–10 minutes. Set aside. - Cook the spinach
Heat olive oil or butter in a pan.
Sauté the onion until soft, then add spinach and cook for 2–3 minutes until wilted.
Drain excess liquid and let cool slightly. - Prepare the custard
In a bowl, whisk the eggs with the cream.
Season with salt, black pepper, and nutmeg. - Assemble the quiche
Spread the spinach mixture evenly over the crust.
Sprinkle grated cheese on top.
