Crispy Fried Chicken Livers

These crispy fried chicken livers are golden and crunchy on the outside while staying tender and flavorful inside. Soaking the livers in buttermilk helps mellow their flavor and keeps them moist, while the seasoned flour creates a deliciously crisp coating. Serve them hot with mashed potatoes, coleslaw, biscuits, or your favorite dipping sauce.

Ingredients

  • 1 lb (450 g) chicken livers, trimmed and rinsed
  • 1 cup buttermilk
    Or use 1 cup milk mixed with 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper, optional
  • Vegetable oil, for frying

Instructions

1. Soak the Chicken Livers

Place the cleaned chicken livers in a bowl and pour the buttermilk over them. Make sure the livers are well coated.

Cover and refrigerate for 30 minutes to 2 hours. This helps tenderize the livers and gives them a milder flavor.

2. Prepare the Seasoned Flour

In a shallow bowl, combine the flour, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper if using.

Mix well so the seasonings are evenly distributed throughout the flour.

3. Coat the Livers

Remove the chicken livers from the buttermilk, allowing any excess liquid to drip off.

Dredge each liver thoroughly in the seasoned flour, making sure it is completely coated. Shake off any excess flour.

4. Heat the Oil

Pour about 2–3 inches of vegetable oil into a heavy, deep skillet or pot.

Heat the oil to 350°F (175°C). A cooking thermometer is helpful for maintaining the correct temperature.

5. Fry the Chicken Livers

Carefully place the coated livers into the hot oil in small batches. Avoid overcrowding the pan, as this can lower the oil temperature and prevent the coating from becoming crispy.

Fry for approximately 4–6 minutes, turning the livers once halfway through cooking, until they are golden brown and cooked through.

For food safety, the internal temperature should reach 165°F (74°C).

6. Drain and Serve

Transfer the fried chicken livers to a wire rack or a plate lined with paper towels to remove excess oil.

While they are still hot, sprinkle with a little additional salt if desired.

Serve immediately for the best texture and flavor.
