One-Pan Ground Sausage and Rice Skillet

Ingredients:

  • 1 lb ground sausage (mild or spicy, your choice)
  • 1 cup long-grain white rice (uncooked)
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 2 cups chicken broth (or water with bouillon)
  • 1 can (14.5 oz) diced tomatoes, undrained (optional)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • Fresh parsley or green onions, chopped (for garnish)

Instructions:

  1. Cook the sausage:
    Heat the oil in a large skillet over medium heat. Add the ground sausage, breaking it up with a spatula, and cook until browned and cooked through (about 5-7 minutes). Remove sausage from the pan and set aside.
  2. Sauté vegetables:
    In the same skillet, add the diced onion and bell pepper. Cook for about 3-4 minutes until softened. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add rice and spices:
    Stir in the uncooked rice, smoked paprika, oregano, salt, and pepper. Cook for 1-2 minutes, stirring frequently, to toast the rice lightly.
  4. Add liquids and sausage:
    Pour in the chicken broth and diced tomatoes with their juice (if using). Stir to combine. Return the cooked sausage to the skillet.
  5. Simmer:
    Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Finish and serve:
    Fluff the rice with a fork. Taste and adjust seasoning if needed. Garnish with fresh parsley or green onions before serving.
