Air Fryer Blueberry Muffins Recipe
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup plain yogurt (or buttermilk)
- 1/4 cup vegetable oil (or melted butter)
- 1 large egg
- 1 tsp vanilla extract
- 1 cup fresh blueberries (or frozen, but thawed and drained)
Instructions:
- Preheat the Air Fryer: Preheat your air fryer to 320°F (160°C) for about 5 minutes.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Mix Wet Ingredients: In another bowl, combine the yogurt, vegetable oil, egg, and vanilla extract. Whisk until smooth.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Gently fold in the blueberries.
- Prepare the Baking Dish: Grease a small, oven-safe baking dish or muffin pan that fits in your air fryer. You can also use silicone muffin cups.
- Fill the Dish: Pour the batter into the prepared dish, filling each cup about two-thirds full.
- Air Fry the Muffins: Place the dish in the air fryer basket and cook at 320°F (160°C) for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the muffins to cool for a few minutes before removing them from the dish. Enjoy warm or at room temperature!
