Ingredients

For the Pastry:

  • 2 ½ cups all-purpose flour
  • ½ cup unsalted butter (cold, cubed)
  • ¼ cup shortening (cold)
  • ½ tsp salt
  • 6–8 tbsp cold water

For the Filling:

  • 1 cup diced potatoes (small cubes)
  • ½ cup diced carrots
  • ½ cup diced onion
  • 1 cup diced beef or lamb (or use minced meat)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme (optional)

For the Glaze:

  • 1 egg (beaten)

Instructions

1. Make the Pastry:

  1. In a large bowl, combine the flour and salt. Add the cubed butter and shortening.
  2. Use a pastry cutter or your fingers to rub the butter and shortening into the flour until the mixture resembles breadcrumbs.
  3. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

2. Prepare the Filling:

  1. In a mixing bowl, combine the diced potatoes, carrots, onion, and beef. Season with salt, pepper, and thyme (if using). Mix well.

3. Assemble the Pasties:

  1. Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Cut out circles approximately 6–8 inches in diameter.
  2. Place a small amount of filling on one side of each circle, leaving space at the edges.
  3. Fold the dough over the filling to create a semi-circle. Press the edges together and crimp with a fork to seal.

4. Air Fry the Pasties:

  1. Preheat your air fryer to 375°F (190°C) for 3–5 minutes.
  2. Brush the pasties with the beaten egg for a golden glaze.
  3. Place the pasties in the air fryer basket, ensuring they don’t touch each other. Cook in batches if necessary.
  4. Air fry for 15–20 minutes, flipping halfway through, until the pastry is golden brown and crispy.

5. Serve:

  • Let the pasties cool slightly before serving. Enjoy them warm with a side of gravy, ketchup, or your favorite sauce!

Tips:

  • For a vegetarian version, replace the meat with more vegetables or cooked lentils.
  • Store leftovers in an airtight container in the fridge and reheat in the air fryer for 5–7 minutes.
