Air Fryer Cracker Jacks
Ingredients
- 6 cups popped popcorn (about 1/4 cup unpopped kernels)
- 1/2 cup peanuts (optional but classic)
- 1/4 cup unsalted butter
- 1/2 cup brown sugar, packed
- 1/4 cup light corn syrup or honey
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
Instructions

Line your air fryer basket with aluminum foil or parchment paper, leaving a bit of room around the edges for air circulation. This will help with easy cleanup and prevent the caramel from sticking. - Make the Caramel Coating
In a small saucepan, melt the butter over medium heat. Add the brown sugar, corn syrup, and salt, stirring until the sugar dissolves. Bring the mixture to a boil and let it cook without stirring for 2-3 minutes. - Add Baking Soda and Vanilla
Remove the caramel mixture from the heat. Carefully stir in the baking soda and vanilla extract. The mixture will bubble up—this is normal and helps create a light, crunchy caramel coating. - Combine Popcorn and Peanuts
In a large bowl, combine the popped popcorn and peanuts. Pour the caramel sauce over the popcorn mixture, tossing to coat evenly. - Air Fry the Popcorn
Place the coated popcorn and peanuts in the prepared air fryer basket. Set the air fryer to 250°F (120°C) and cook for 10-15 minutes, shaking the basket every 5 minutes to ensure even cooking. The caramel should harden slightly and turn a golden color. - Cool and Serve
Transfer the Cracker Jacks to a baking sheet or large bowl to cool completely. Once cooled, break into clusters and enjoy!
