Air Fryer Vanilla Berry Pavlova

Ingredients:

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract (for the cream)
  • Fresh mixed berries (strawberries, blueberries, raspberries)
  • Mint leaves for garnish (optional)

Instructions:

  1. Prepare the Pavlova:
    • Preheat your air fryer to 300°F (150°C) and line the air fryer basket with parchment paper.
    • In a clean, dry bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
    • Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat the mixture. Beat until stiff peaks form, and the meringue is glossy.
    • Gently fold in the vanilla extract, white vinegar, and cornstarch until just combined.
  2. Shape the Pavlova:
    • Spoon the meringue onto the prepared parchment paper in the air fryer basket, shaping it into a circle with a slight dip in the center to hold the cream and berries later.
    • Smooth the edges for a neat appearance.
  3. Cook the Pavlova:
    • Place the meringue in the air fryer and cook at 300°F (150°C) for 30-35 minutes. The outside should be crisp and lightly golden, while the inside remains soft and marshmallow-like.
    • Once cooked, turn off the air fryer and let the Pavlova cool inside with the door slightly open for about an hour.
  4. Prepare the Topping:
    • In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
    • Gently spoon the whipped cream onto the cooled Pavlova, spreading it evenly.
  5. Assemble and Serve:
    • Top the whipped cream with fresh mixed berries.
    • Garnish with mint leaves if desired.
    • Serve immediately and enjoy your Air Fryer Vanilla Berry Pavlova!
