Air Fryer Vanilla Berry Pavlova
Ingredients:
- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 cup heavy cream
- 1 tablespoon powdered sugar
- 1 teaspoon vanilla extract (for the cream)
- Fresh mixed berries (strawberries, blueberries, raspberries)
- Mint leaves for garnish (optional)
Instructions:
- Prepare the Pavlova:
- Preheat your air fryer to 300°F (150°C) and line the air fryer basket with parchment paper.
- In a clean, dry bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat the mixture. Beat until stiff peaks form, and the meringue is glossy.
- Gently fold in the vanilla extract, white vinegar, and cornstarch until just combined.
- Shape the Pavlova:
- Spoon the meringue onto the prepared parchment paper in the air fryer basket, shaping it into a circle with a slight dip in the center to hold the cream and berries later.
- Smooth the edges for a neat appearance.
- Cook the Pavlova:
- Place the meringue in the air fryer and cook at 300°F (150°C) for 30-35 minutes. The outside should be crisp and lightly golden, while the inside remains soft and marshmallow-like.
- Once cooked, turn off the air fryer and let the Pavlova cool inside with the door slightly open for about an hour.
- Prepare the Topping:
- In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
- Gently spoon the whipped cream onto the cooled Pavlova, spreading it evenly.
- Assemble and Serve:
- Top the whipped cream with fresh mixed berries.
- Garnish with mint leaves if desired.
