Apple Pancakes Recipe

Ingredients:

  • For the Pancake Batter:
    • 1 cup all-purpose flour
    • 2 tablespoons sugar
    • 1 tablespoon baking powder
    • 1/4 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1 large egg
    • 3/4 cup milk
    • 2 tablespoons unsalted butter, melted
    • 1 teaspoon vanilla extract
  • For the Apple Filling:
    • 1 large apple (Granny Smith or Honeycrisp work well), peeled and grated or finely chopped
    • 1 tablespoon lemon juice (to prevent browning)
    • 1/2 teaspoon cinnamon
    • 1 tablespoon sugar (optional)
  • For Cooking:
    • Butter or oil for greasing the pan
  • Optional Toppings:
    • Maple syrup
    • Powdered sugar
    • Fresh fruit

Instructions:

  1. Prepare the Apple Filling:
    • Peel and grate or finely chop the apple. Toss it with the lemon juice, cinnamon, and sugar (if using) in a small bowl. Set it aside to macerate while you prepare the pancake batter.
  2. Make the Pancake Batter:
    • In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
    • In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if the batter is a little lumpy.
  3. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
    • Once the pan is hot, drop a 1/4 cup of pancake batter onto the pan.
    • Immediately spoon a small amount of the prepared apple filling onto the center of each pancake, pressing it gently into the batter.
    • Cook for 2-3 minutes until small bubbles form on the surface and the edges look set.
    • Flip the pancake and cook for another 1-2 minutes on the other side until golden brown and cooked through.
    • Repeat with the remaining batter and apple filling, greasing the pan as needed.
  4. Serve:
    • Stack the pancakes on plates and serve with your favorite toppings like maple syrup, powdered sugar, or extra apple slices.

Tips:

  • Make them fluffier: For extra fluffy pancakes, you can separate the egg, beat the egg whites until stiff peaks form, and gently fold them into the batter at the end.
  • Add nuts: You can mix in some chopped walnuts or pecans for a bit of crunch.
  • More apple flavor: Add a little bit of apple sauce or diced apples directly into the batter for a more pronounced apple flavor.
