Baked Parmesan Garlic Potato Wedges

Ingredients:

  • 4 medium russet potatoes, scrubbed and cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning (or a mix of dried oregano, basil, and thyme)
  • ½ teaspoon paprika (optional for color & flavor)
  • ½ teaspoon salt, more to taste
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 1 tablespoon fresh chopped parsley (optional, for garnish)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease with oil.
  2. Cut potatoes into even wedges (about 8 per potato for thinner wedges).
  3. In a large bowl, toss the potato wedges with olive oil, garlic powder, Italian seasoning, paprika, salt, and pepper until well coated.
  4. Add the Parmesan cheese and toss again so the wedges are evenly coated.
  5. Arrange wedges in a single layer on the baking sheet, skin-side down if possible, so they crisp up nicely.
  6. Bake for 35–40 minutes, flipping halfway through, until golden brown and fork-tender.
  7. Garnish with fresh parsley and serve hot with ketchup, ranch, or garlic aioli.

  • Soak cut potato wedges in cold water for 15–30 mins before baking to remove excess starch — helps them crisp up better.
  • Don’t overcrowd the pan.
  • For extra crispiness, broil the last 2-3 minutes.
