Here’s a recipe for Baked Sweet and Sour Chicken that’s simple, delicious, and perfect for dinner. This recipe combines crispy baked chicken with a tangy, sweet, and sour sauce.


Ingredients

For the Chicken:

  • 2 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup cornstarch
  • 2 large eggs (beaten)
  • ½ cup vegetable oil (for frying)

For the Sweet and Sour Sauce:

  • ¾ cup granulated sugar
  • ½ cup apple cider vinegar (or white vinegar)
  • ½ cup ketchup
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • ¼ tsp salt

Instructions

1. Prepare the Chicken:

  1. Preheat your oven to 325°F (163°C).
  2. Lightly season the chicken pieces with salt and pepper.
  3. Coat the chicken pieces in cornstarch, then dip them into the beaten eggs.
  4. Heat the vegetable oil in a skillet over medium-high heat. Fry the chicken pieces just until they are golden brown on the outside (they don’t need to be fully cooked). Place the browned chicken in a greased 9×13-inch baking dish.

2. Make the Sauce:

  1. In a medium-sized bowl, whisk together the sugar, vinegar, ketchup, soy sauce, garlic powder, and salt until smooth.

3. Bake the Chicken:

  1. Pour the sweet and sour sauce evenly over the chicken in the baking dish.
  2. Toss the chicken gently to coat each piece with the sauce.
  3. Bake, uncovered, for 1 hour, stirring the chicken every 15 minutes to ensure it’s evenly coated with the sauce and caramelized.

4. Serve:

  • Serve the baked sweet and sour chicken over steamed white rice, with a side of vegetables like broccoli or snap peas.

Tips:

  • For extra flavor, garnish with chopped green onions or sesame seeds before serving.
  • If you prefer a thicker sauce, you can simmer the sauce on the stove for a few minutes to reduce it before pouring it over the chicken.
