✅ Ingredients:

For the sausage gravy:

  • 1 lb (450 g) breakfast sausage
  • 3 tbsp all-purpose flour
  • 2½ cups milk (whole or 2%)
  • Salt & black pepper to taste

For the casserole:

  • 1 (30 oz / 850 g) bag frozen hash browns (thawed)
  • 1½ cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika (optional)
  • Salt & pepper to taste
  • 1 can (16 oz / 450 g) refrigerated biscuit dough (e.g., Pillsbury Grands)
  • 2 tbsp melted butter (optional, for brushing biscuits)

🔪 Instructions:

1. Make the sausage gravy:

  1. In a large skillet over medium heat, brown the sausage, breaking it up as it cooks.
  2. Once fully cooked, sprinkle flour over the sausage and stir until combined (1–2 minutes).
  3. Gradually pour in milk while stirring constantly. Bring to a simmer and cook until thickened (5–7 minutes).
  4. Season with salt and pepper to taste. Remove from heat.

2. Prepare the hashbrowns:

  1. In a large bowl, mix together the thawed hash browns, shredded cheese, garlic powder, onion powder, paprika, salt, and pepper.

3. Assemble the casserole:

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13 inch baking dish.
  3. Spread the hash brown mixture evenly in the dish.
  4. Pour the sausage gravy over the hash browns.
  5. Cut the biscuit dough into quarters (or smaller pieces) and place evenly over the top of the casserole.
  6. Optional: Brush biscuit pieces with melted butter for a golden finish.

4. Bake:

  1. Bake uncovered for 30–35 minutes or until biscuits are golden brown and cooked through.
  2. Let rest for 5–10 minutes before serving.

🍳 Tips:

  • For a spicier kick, add a pinch of red pepper flakes to the sausage.
  • You can prepare the gravy and hashbrowns ahead of time and refrigerate overnight before baking.
  • Serve with hot sauce or a side of scrambled eggs for a complete breakfast.
