🧀 Cheesy Spinach Crisps

Ingredients:

  • 1 cup fresh spinach leaves, finely chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
  • 1 clove garlic, minced (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the mixture:
    In a mixing bowl, combine the chopped spinach, mozzarella, parmesan, garlic (if using), salt, and pepper. Mix well until evenly combined.
  3. Spoon the mixture:
    Drop spoonfuls of the mixture onto the baking sheet, flattening each into a small circle (about 2 inches wide). Leave a little space between each crisp.
  4. Bake:
    Bake for 8–10 minutes, or until the edges are golden brown and crispy.
  5. Cool:
    Let the crisps cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely — they’ll become even crispier as they cool.

Tips:

  • You can replace spinach with kale or add a pinch of chili flakes for spice.
  • Store leftovers in an airtight container for up to 3 days at room temperature.
