Cinnamon Sugar Donut Muffins Recipe

Yield: 12 muffins
Prep Time: 20 minutes
Cook Time: 15–18 minutes
Total Time: ~35 minutes(melskitchencafe.com, bellyfull.net, livingsweetmoments.com)

Ingredients:

For the Muffins:

  • 1¾ cups (249 g) all-purpose flour
  • ½ cup (106 g) granulated sugar
  • ¼ cup (53 g) packed light brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (240 ml) milk or buttermilk
  • ⅓ cup (80 ml) vegetable or canola oil, or melted butter(melskitchencafe.com)

For the Topping:

  • ½ cup (106 g) granulated sugar
  • 1 tsp ground cinnamon
  • 6 tbsp (85 g) melted butter(melskitchencafe.com)

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line with paper liners.
  2. Prepare the muffin batter: In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.(melskitchencafe.com)
  3. Combine wet ingredients: In a separate bowl, whisk together the egg, vanilla extract, milk (or buttermilk), and oil (or melted butter).(melskitchencafe.com)
  4. Mix wet and dry ingredients: Add the wet ingredients to the dry ingredients and stir with a rubber spatula until just combined. Be careful not to overmix; it’s okay if the batter is slightly lumpy.
  5. Fill the muffin tin: Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.(melskitchencafe.com)
  6. Bake: Bake for 15–18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  8. Prepare the topping: In a small bowl, mix together the granulated sugar and cinnamon.
  9. Coat the muffins: Once the muffins are cool enough to handle, dip the tops into the melted butter, then roll them in the cinnamon-sugar mixture until well coated.(melskitchencafe.com)

Tips & Variations:

  • Mini Muffins: For mini muffins, reduce the baking time to 10–12 minutes.(iambaker.net)
  • Flavor Variations: Add a teaspoon of ground nutmeg or a splash of vanilla extract to the batter for extra flavor.
  • Storage: Store the muffins in an airtight container at room temperature for up to 3 days.
  • Freezing: Freeze uncoated muffins in a single layer on a baking sheet, then transfer to a freezer bag. To serve, reheat in the oven and coat with melted butter and cinnamon-sugar.

Enjoy these delightful Cinnamon Sugar Donut Muffins with a cup of coffee or as a sweet snack anytime!
