Cod in a Tomato Lemon Butter Sauce

Here’s a simple and delicious Cod in a Tomato Lemon Butter Sauce recipe — perfect for a light, flavorful meal.


🐟 Cod in a Tomato Lemon Butter Sauce

🕒 Ready in 30 minutes | 🍽 Serves 2–4


Ingredients:

  • 4 cod fillets (about 5–6 oz each)
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (14 oz) crushed tomatoes (or use fresh ripe tomatoes, chopped)
  • Zest and juice of 1 lemon
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp dried oregano or Italian seasoning
  • Fresh parsley or basil, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Season the cod:
    Pat cod fillets dry and season both sides with salt and pepper.
  2. Sear the cod:
    Heat olive oil in a large skillet over medium-high heat.
    Add the cod and sear for 2–3 minutes per side until golden. Remove and set aside (fish doesn’t need to be fully cooked yet).
  3. Make the sauce:
    In the same skillet, reduce heat to medium. Add butter, then sauté the garlic and onion until softened (about 3–4 minutes).
  4. Add tomato and lemon:
    Stir in crushed tomatoes, lemon juice, lemon zest, red pepper flakes, and oregano. Simmer uncovered for 8–10 minutes until slightly thickened.
  5. Return cod to skillet:
    Gently place the cod fillets back into the sauce. Spoon sauce over the top. Cover and simmer for another 5–7 minutes until the cod is fully cooked and flakes easily.
  6. Serve:
    Garnish with chopped parsley or basil. Serve with rice, pasta, crusty bread, or roasted vegetables.

✅ Tips:

  • Use a nonstick or well-oiled pan to prevent cod from sticking.
  • Add olives or capers for a Mediterranean twist.
  • Use fresh tomatoes when in season for extra flavor.
