Cream Cheese Funfetti Bars
Ingredients
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup rainbow sprinkles (or Funfetti-style sprinkles)
Instructions
- Preheat the Oven
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it. - Cream Butter, Cream Cheese, and Sugars
In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy. Add the granulated sugar and brown sugar, and beat until well combined and fluffy. - Add Eggs and Vanilla
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. - Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix. - Fold in the Sprinkles
Gently fold in the rainbow sprinkles, spreading them evenly throughout the batter. - Bake the Bars
Spread the batter evenly into the prepared baking dish. Bake for 25-30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean. Be careful not to overbake, as you want the bars to stay soft and chewy. - Cool and Cut
Allow the bars to cool in the pan completely before cutting into squares. Once cooled, cut into bars and serve.
