  • 2 tablespoons all-purpose flour
  • 2 cups whole milk (warm)
  • ½ cup heavy cream
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • Salt to taste
  • 1 cup shredded mozzarella
  • 1 cup shredded sharp cheddar
  • ½ cup grated Parmesan

For assembling:

  • 3 cups cooked pasta (like penne or rotini), or 3 cups sliced cooked potatoes
  • Extra cheese for topping (½ cup cheddar or mozzarella)
  • Optional: fresh thyme or parsley for garnish

Instructions:

1. Caramelize the Onions:

  • In a large skillet over medium heat, melt the butter and olive oil.
  • Add the sliced onions and stir to coat.
  • Sprinkle with salt and sugar. Cook slowly for 25–30 minutes, stirring occasionally, until golden brown and soft.
  • Add balsamic vinegar at the end (if using) and cook 2 more minutes. Set aside.

2. Make the Cheese Sauce:

  • In a saucepan, melt the butter over medium heat.

  • Slowly pour in the warm milk and cream, whisking constantly to avoid lumps.
  • Add garlic powder, salt, and pepper.
  • Stir in the mozzarella, cheddar, and Parmesan until melted and smooth.
  • Taste and adjust seasoning if needed.

3. Assemble the Casserole:

  • Preheat your oven to 375°F (190°C).
  • In a greased 9×13-inch baking dish, combine cooked pasta (or sliced potatoes), caramelized onions, and the cheese sauce. Mix well.
  • Top with extra shredded cheese.
  • Bake uncovered for 20–25 minutes, or until bubbly and golden on top.

4. Serve:

  • Let cool for 5–10 minutes before serving.
