🧂 Ingredients:

  • 2 cod fillets (about 4–6 oz each), thawed if frozen
  • ½ cup breadcrumbs (Panko for extra crispiness)
  • ¼ cup grated Parmesan cheese (optional, for extra flavor)
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg
  • 2 tablespoons flour
  • Olive oil spray or cooking spray
  • Lemon wedges (for serving)
  • Optional: fresh parsley for garnish

🍽️ Instructions:

  1. Prep the Fish
    • Pat the cod fillets dry with a paper towel.
    • Lightly season them with a pinch of salt and pepper.
  2. Prepare the Breading Station
    • In one bowl, beat the egg.
    • In a second bowl, mix the flour.
    • In a third bowl, combine breadcrumbs, Parmesan (if using), paprika, garlic powder, onion powder, salt, and pepper.
  3. Bread the Cod
    • Dredge each cod fillet in the flour, shaking off excess.
    • Dip into the beaten egg.
    • Then coat thoroughly in the seasoned breadcrumb mixture, pressing lightly to adhere.
  4. Air Fry
    • Preheat your air fryer to 400°F (200°C) for 3 minutes.
    • Spray the air fryer basket with olive oil or non-stick spray.
    • Place the breaded cod fillets in the basket in a single layer (don’t overcrowd).
    • Spray the tops of the fillets lightly with oil.
  5. Cook
    • Air fry at 400°F (200°C) for 10–12 minutes, flipping halfway through, until golden brown and the fish flakes easily with a fork. Internal temp should reach 145°F (63°C).

🍋 Serve With:

  • Lemon wedges
  • Tartar sauce or garlic aioli
  • Side salad, steamed vegetables, or air fryer potatoes
