Ingredients:

  • 2 large eggs
  • 2 tablespoons sugar
  • 1/4 teaspoon vanilla extract
  • 1/2 cup (120 ml) milk
  • 1 cup (125 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 2 tablespoons vegetable oil (or melted butter)
  • Butter and maple syrup, for serving
  • Powdered sugar (optional, for dusting)

Instructions:

  1. Separate the eggs: Start by separating the egg whites from the egg yolks into two separate bowls.
  2. Mix the egg yolks: In a bowl with the egg yolks, add the sugar and whisk until the mixture becomes smooth and pale. Then, add the milk and vanilla extract and whisk until combined.
  3. Combine the dry ingredients: In a separate bowl, sift the flour, baking powder, baking soda, and a pinch of salt. Gradually add this dry mixture to the wet ingredients, and whisk until smooth. Then, add the vegetable oil or melted butter and mix until incorporated.
  4. Whip the egg whites: In a clean bowl, whisk the egg whites using an electric mixer on high speed until stiff peaks form. This is the key to getting the fluffiness in your pancakes.
  5. Fold the egg whites into the batter: Gently fold the whipped egg whites into the pancake batter in three additions, being careful not to deflate the air you’ve created. Use a spatula and fold in a circular motion.
  6. Cook the pancakes: Heat a non-stick frying pan or griddle over low to medium heat. Lightly grease it with a small amount of butter or oil. Scoop 1/4 cup of batter into the pan and cover it with a lid. Let it cook for about 4-5 minutes, then flip carefully. Cook the other side for another 3-4 minutes, keeping the lid on to maintain the fluffy texture.
  7. Serve: Stack the pancakes on a plate. You can top them with butter, maple syrup, powdered sugar, or fresh fruit.
