Garlic Steak & Potato Foil Packets
Ingredients:
2 pounds lean sirloin steak, trimmed and cut into 2-inch chunks
1 pound baby yellow potatoes, quartered or halved to your liking
1 tablespoon minced garlic (adjust to taste)
2 teaspoons Italian seasoning (or a mix of dried oregano, thyme, and parsley)
1 teaspoon onion powder
3 tablespoons olive oil
Salt and freshly ground pepper, to taste

- Steak: It’s important to use a cut that stays tender when cooked this way. Top sirloin is definitely my preferred cut for foil packets – and what I usually use when I make these.
- Potatoes: I use fingerling or baby potatoes, or smaller Yukon Golds. I prefer these over others, because they don’t need to be peeled and are quicker/easier to prep.
- Olive oil: This is my preferred oil for this recipe, but feel free to use a different vegetable oil you use in your kitchen.
- Garlic: For a more intense garlic flavor (my amount is on the kid-friendly side ?), double the amount of garlic used.
- More flavor: If you want to make the potatoes more decadent, mix some chopped bacon and/or shredded cheddar cheese into them before sealing the packets.
- Vegetables? If you want to cook some vegetables right along the steak and potatoes in the foil packets, green peppers, asparagus or green beans can be added.
Preheat the Air Fryer:
Preheat your air fryer to 400°F (200°C).
Mix & Marinate:
In a large mixing bowl, combine the sirloin steak chunks, baby yellow potatoes, minced garlic, Italian seasoning, onion powder, olive oil, salt, and freshly ground pepper.
Gently toss the ingredients until they are well-coated with the seasonings.
Prepare the Foil Packets:
Cut large pieces of aluminum foil (about 12×18 inches each).
Divide the steak and potato mixture evenly among the foil pieces.
Fold the sides of the foil up and over the steak and potatoes, sealing the packets tightly so that no steam escapes.
Cook the Packets:
Place the foil packets in the preheated air fryer basket. You may need to cook in batches depending on the size of your air fryer.
Cook at 400°F (200°C) for 15-20 minutes, or until the steak is cooked to your desired doneness and the potatoes are tender. Shake the basket or flip the packets halfway through the cooking time for even cooking.
Serve:
Carefully open the foil packets (beware of the hot steam) and serve immediately.
