In a skillet over medium-high heat, cook ground beef, breaking it apart with a spoon until fully browned. Season with salt and pepper, then transfer to a dish and keep warm.
In a separate pan, cook bacon slices until crisp. Place on paper towels to drain, then crumble into small pieces.
In a bowl, whisk together mayonnaise, ketchup, and yellow mustard until smooth and well combined. Set aside
Heat flour tortillas in a dry skillet for 20-30 seconds per side, or until soft and pliable.
Lay each tortilla flat. Layer cooked ground beef, crumbled bacon, cheddar cheese, mozzarella cheese, sautéed onion, lettuce leaves, and tomato slices down the center.
Drizzle creamy cheese sauce and the prepared burger sauce evenly over the fillings.
Fold in the sides of the tortilla and roll tightly to enclose the filling. Serve warm, garnished with additional bacon crumbles and cheese sauce if desired.
