Here’s a recipe to recreate Long John Silver’s famous batter, perfect for fried fish or chicken in an air fryer:


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon white pepper (optional)
  • 1 cup cold club soda or water
  • Cooking spray (for the air fryer)

Instructions

  1. Prepare the Batter:
    • In a mixing bowl, combine the flour, cornstarch, baking powder, salt, onion powder, garlic powder, paprika, and white pepper.
    • Gradually whisk in the cold club soda or water until the batter is smooth and slightly thick. It should coat the back of a spoon.
  2. Prepare the Fish or Chicken:
    • Pat the fish or chicken pieces dry with a paper towel.
    • Lightly dust them with flour to help the batter stick better.
  3. Coat with Batter:
    • Dip each piece into the batter, ensuring it is evenly coated. Let the excess batter drip off.
  4. Air Frying:
    • Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
    • Lightly grease the air fryer basket with cooking spray to prevent sticking.
    • Place the battered pieces in a single layer in the basket, ensuring they don’t overlap.
    • Spray the tops of the battered pieces lightly with cooking spray for a crispier texture.
  5. Cook:
    • Air fry for 8-10 minutes, then flip the pieces, spray again, and cook for another 6-8 minutes, or until golden brown and crispy. The internal temperature of fish should reach 145°F (63°C), and chicken should reach 165°F (74°C).
  6. Serve:
    • Serve immediately with tartar sauce, lemon wedges, or your favorite dipping sauce.
