🧾 Ingredients

  • 1 large sweet onion, finely chopped

  • 2 large eggs

  • ½ cup almond flour

  • 2 tablespoons coconut flour

  • ¼ cup grated Parmesan cheese

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon garlic powder (optional but recommended)

  • 2 tablespoons heavy cream or unsweetened almond milk

  • Avocado oil, lard, or bacon grease (for frying)


🔪 Instructions

  1. Prep the Onion
    Chop the onion finely. If very juicy, lightly pat dry with a paper towel.

  2. Mix the Batter
    In a bowl, whisk eggs and cream. Stir in almond flour, coconut flour, Parmesan, baking powder, salt, pepper, and garlic powder until thick.

  3. Add Onions
    Fold onions into the batter. Let rest 2–3 minutes so the coconut flour absorbs moisture.

  4. Heat the Oil
    Heat about ¼ inch of oil in a skillet over medium heat. Oil should shimmer but not smoke.

  5. Fry the Fritters
    Drop heaping tablespoons of batter into the skillet. Flatten slightly.
    Fry 2–3 minutes per side until deep golden brown and crispy.

  6. Drain & Serve
    Remove to a paper-towel-lined plate. Serve hot.
