Moist Burrito Recipe
Ingredients
For the filling:
- 1 lb (450g) ground beef or shredded chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 can (15 oz) refried beans
- 1 cup canned diced tomatoes (drained)
- 1 packet taco seasoning
- 1/2 cup water
For assembly:
- 6 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 1 cup sour cream
- 1 cup salsa
For topping:
- 1 can (10 oz) red enchilada sauce
- 1/2 cup shredded cheese
- Chopped cilantro (optional)
Instructions
- Prepare the filling:
- In a large skillet, cook the ground beef or chicken over medium heat until fully cooked. Drain excess fat.
- Add onion and garlic to the skillet; cook until softened (2-3 minutes).
- Stir in taco seasoning, water, diced tomatoes, and refried beans. Let simmer for 5 minutes, stirring occasionally.
- Mix in the cooked rice and remove from heat.
- Assemble the burritos:
- Lay a tortilla flat and spread a spoonful of sour cream in the center.
- Add a generous amount of the filling, sprinkle with cheese, and fold the tortilla into a burrito (fold the sides, then roll tightly).
- Bake the burritos:
- Preheat your oven to 375°F (190°C).
- Place the burritos seam-side down in a greased baking dish.
- Pour enchilada sauce over the burritos, covering them completely.
- Sprinkle additional shredded cheese on top.
- Bake and serve:
- Cover the dish with foil and bake for 15 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.
- Garnish with chopped cilantro if desired, and serve with salsa on the side.

- Add a bit of enchilada sauce or sour cream inside the burrito for extra moisture.
