Sure, here’s a recipe for making raspberry pavlova in the air fryer:

Ingredients:
– 4 large egg whites, at room temperature
– 1 cup caster sugar (superfine sugar)
– 1 teaspoon white vinegar or lemon juice
– 1 teaspoon cornstarch (cornflour)
– 1 teaspoon vanilla extract
– 1 cup fresh raspberries
– Whipped cream, for topping
– Additional raspberries, for garnish
– Mint leaves, for garnish (optional)

Instructions:
1. Preheat your air fryer to 300°F (150°C) for about 5 minutes.

2. In a clean, dry mixing bowl, beat the egg whites with an electric mixer on high speed until stiff peaks form.

3. Gradually add the caster sugar, one tablespoon at a time, while continuing to beat the egg whites. Beat until the sugar is fully incorporated and the mixture is thick and glossy.

4. Gently fold in the white vinegar or lemon juice, cornstarch, and vanilla extract until well combined.

5. Line the air fryer basket or tray with parchment paper. Spoon the pavlova mixture onto the parchment paper, shaping it into a round disc about 8 inches (20 cm) in diameter and smoothing the top.

6. Place the pavlova in the preheated air fryer and cook at 300°F (150°C) for about 30-35 minutes, or until the pavlova is lightly golden and crisp on the outside. The inside should remain soft and marshmallow-like.

7. Once the pavlova is cooked, turn off the air fryer and let it cool completely inside the air fryer with the door slightly ajar. This helps prevent the pavlova from collapsing.

8. Once cooled, carefully transfer the pavlova to a serving plate. Top with whipped cream and fresh raspberries.

9. Garnish with additional raspberries and mint leaves, if desired.

10. Serve immediately and enjoy your delicious air fryer raspberry pavlova!

Note: The cooking time may vary depending on the size and model of your air fryer. Keep an eye on the pavlova towards the end of the cooking time to prevent it from overbrowning.
