For the cookies:

  • 1 cup (226g) unsalted butter, softened
  • 2/3 cup (135g) granulated sugar
  • 1 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup raspberry jam (seedless preferred)

For the lemon glaze:

  • 1 cup (120g) powdered sugar
  • 2–3 tbsp fresh lemon juice
  • 1/2 tsp lemon zest (optional, for extra zing)

👩‍🍳 Instructions

1. Make the cookie dough

  • In a large bowl, cream together the butter and sugar until light and fluffy (about 2-3 minutes).
  • Mix in the vanilla extract.
  • Add the flour and salt; mix until just combined. The dough will be soft but should hold together.

2. Shape and fill the cookies

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop dough (about 1 tbsp each) and roll into balls. Place on baking sheet 2 inches apart.
  • Use your thumb or the back of a 1/2 tsp measuring spoon to make an indentation in the center of each cookie.
  • Fill each indentation with about 1/2 tsp of raspberry jam.

3. Bake

  • Bake for 12–15 minutes, or until the edges are just starting to turn golden.
  • Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

4. Prepare the lemon glaze

  • In a small bowl, whisk together powdered sugar, lemon juice, and zest until smooth and pourable.
  • Drizzle over cooled cookies using a spoon or piping bag.

  • Use other jams: Try apricot, strawberry, or blackberry for different flavors.
  • Chill the dough if it’s too soft to work with — 15–20 minutes in the fridge helps.
  • Make ahead: Cookies freeze well (without glaze). Add glaze after thawing.

  • Store in an airtight container at room temperature for up to 5 days.
  • Freeze (unglazed) cookies for up to 2 months.
