Sheet Pan Sausage with Potatoes & Green Beans

Ingredients:

  • 4 sausage links (such as Italian sausage, chicken sausage, or your favorite variety)
  • 1 lb (450 g) baby potatoes or Yukon Gold potatoes, halved or quartered
  • 1 lb (450 g) green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp paprika (optional for some smoky flavor)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Lemon wedges (optional, for serving)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Vegetables:
    • Halve or quarter the potatoes if they’re larger. If using baby potatoes, leaving them halved should be fine.
    • Trim the ends of the green beans.
  3. Season the Potatoes:
    • In a large bowl, toss the halved potatoes with 1 tablespoon of olive oil, garlic powder, onion powder, paprika (if using), salt, and pepper. Mix well to coat evenly.
    • Spread the potatoes in a single layer on a large sheet pan.
  4. Prepare the Sausage:
    • If using sausage links, cut them into 2-3 inch pieces to make them easier to eat and cook evenly.
    • Arrange the sausage pieces on the same sheet pan, around the potatoes.
  5. Roast the Potatoes and Sausage:
    • Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the potatoes start to soften and the sausage begins to brown. Flip the sausage and potatoes halfway through for even cooking.
  6. Add the Green Beans:
    • While the sausage and potatoes are roasting, toss the green beans with the remaining 1 tablespoon of olive oil, salt, and pepper.
    • After 25-30 minutes, remove the sheet pan from the oven and add the green beans to the pan, spreading them evenly.
    • Return the sheet pan to the oven and continue roasting for another 15-20 minutes, or until the potatoes are golden brown, the sausages are cooked through, and the green beans are tender and slightly caramelized.
  7. Serve:
    • Once everything is roasted to perfection, remove from the oven and garnish with freshly chopped parsley, if desired.
    • Serve with lemon wedges on the side for a burst of freshness.

Optional Variations:

  • Use Different Sausages: Try using different types of sausages, such as spicy chorizo, bratwurst, or even vegetarian sausage for a different flavor profile.
  • Add More Veggies: You can also add other vegetables like bell peppers, carrots, or onions to the mix. Just make sure they’re cut to similar sizes so everything cooks evenly.
  • Herb Variation: Swap out oregano for thyme, rosemary, or Italian seasoning for a change in flavor.
