PREPARATION:

Step 1: Prepare the Slow Cooker

  1. Grease the inside of a 4–6 quart slow cooker with cooking spray or butter to prevent sticking.

Step 2: Mix the Batter

  1. In a large mixing bowl, whisk together the granulated sugar, brown sugar, and melted butter until smooth.
  2. Add the beaten eggs and vanilla extract, stirring until fully combined.
  3. In a separate bowl, sift together the flour, baking powder, salt, cinnamon, and nutmeg (if using). Gradually add the dry ingredients to the wet mixture, alternating with the milk, and stir until the batter is smooth.

Step 3: Layer the Ingredients

  1. Spread half of the batter evenly across the bottom of the prepared slow cooker.
  2. Arrange half of the banana slices in an even layer over the batter.
  3. Pour the remaining batter on top, spreading it gently to cover the bananas.
  4. Top with the remaining banana slices, pressing them lightly into the batter.

Step 4: Cook the Pudding

  1. Cover the slow cooker and cook on LOW for 3–4 hours, or until the center is set and a toothpick inserted comes out clean or with just a few moist crumbs. Avoid lifting the lid during cooking, as this can extend the cooking time.

Step 5: Serve and Enjoy

  1. Once done, turn off the slow cooker and let the pudding cool slightly for 10–15 minutes.
  2. Spoon warm servings of the pudding into bowls and top with vanilla ice cream or whipped cream, if desired. Drizzle with extra caramel sauce or a sprinkle of cinnamon for added indulgence.

Tips for Success

  • Banana Selection: Use ripe but firm bananas for the best flavor and texture. Overripe bananas may become too mushy during cooking.
  • Add-Ins: For extra richness, stir in ½ cup of chopped pecans or walnuts before cooking. You can also drizzle rum or bourbon over the bananas for an authentic Bananas Foster twist (omit for a kid-friendly version).
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave for a quick treat.
  • Make Ahead: Assemble the pudding the night before, cover, and refrigerate. Cook it in the morning for a stress-free dessert.
