🧨 Smoked Brisket & Beer Cheese Pretzel Bombs

📝 Ingredients:

For the Dough (or use pre-made pizza dough):

  • 2 ¼ tsp active dry yeast
  • 1 cup warm water (110°F / 43°C)
  • 1 tbsp brown sugar
  • 2 ½–3 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp melted butter (optional for extra flavor)

For the Beer Cheese:

  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • ½ cup beer (lager or ale)
  • ¾ cup whole milk
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • 1 ½ cups sharp cheddar cheese, shredded
  • Salt to taste

For the Filling:

  • 1 ½ cups smoked brisket, finely chopped
  • ¾ cup beer cheese (from above, cooled)
  • Optional: sliced jalapeños, caramelized onions

For Boiling:

  • 6 cups water
  • ⅓ cup baking soda

For Topping:

  • Coarse sea salt
  • Melted butter for brushing

🔪 Instructions:

1. Make the Dough:

  • In a bowl, combine warm water, sugar, and yeast. Let it sit 5–10 minutes until frothy.
  • Mix in salt and gradually add flour until a dough forms.
  • Knead for 5–8 minutes until smooth and elastic. Cover and let rise 1 hour.

2. Prepare Beer Cheese:

  • In a saucepan, melt butter. Whisk in flour and cook 1 min.
  • Slowly add beer and milk, whisking constantly.
  • Stir in mustard, garlic powder, and salt.
  • Add shredded cheese and stir until melted and smooth. Let cool.

3. Form the Bombs:

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Divide dough into 12 pieces. Flatten each into a disc.
  • Add ~1 tbsp brisket and ~1 tbsp beer cheese to each.
  • Pinch and seal into a ball, smooth side up.

4. Baking Soda Bath:

  • Boil 6 cups water + baking soda.
  • Carefully boil each bomb for 20–30 seconds, then transfer to baking sheet.

5. Bake:

  • Brush with melted butter, sprinkle with sea salt.
  • Bake for 15–18 minutes or until deep golden brown.

  • Use leftover smoked brisket or store-bought BBQ brisket.
  • Add spicy heat with jalapeños or smoky paprika in the cheese.
  • Freeze unbaked bombs for future snacking — just thaw and bake as normal.
