Spiced Citrus-Marinated Feta with Herbs and Calabrian Chili
Ingredients:
- 8 oz feta cheese, cut into 1/2-inch cubes or sliced thick
- Zest of 1 orange + 2 tablespoons fresh orange juice
- Zest of 1 lemon + 1 tablespoon fresh lemon juice
- 1 teaspoon coriander seeds, lightly crushed
- 1/2 teaspoon fennel seeds, lightly crushed
- 1/2 teaspoon black peppercorns, lightly crushed
- 2–3 Calabrian chilis, chopped (or 1 tbsp Calabrian chili paste)
- 2–3 garlic cloves, thinly sliced
- 3–4 sprigs fresh thyme
- 2 sprigs fresh rosemary, lightly bruised
- 1/4 cup fresh parsley, roughly chopped (optional, for garnish)
- 2/3 cup extra virgin olive oil
- Salt to taste (optional; feta is already salty)
Instructions:
- Prep the Marinade:
- In a bowl or jar, combine olive oil, orange and lemon zest and juice, crushed spices (coriander, fennel, peppercorns), Calabrian chili, garlic, and fresh herbs (thyme, rosemary).
- Mix gently to combine.
- Add the Feta:
- Place feta pieces in a shallow dish or jar.
- Pour the marinade over the feta until fully covered.
- Let sit at room temperature for 30 minutes or refrigerate for up to 3 days. The longer it marinates, the deeper the flavor.
- To Serve:
- Bring to room temperature if chilled.
- Drizzle with additional olive oil if needed.
- Garnish with fresh parsley.
- Serve with crusty bread, olives, or as a topper for grain bowls, salads, or roasted vegetables.
Variations:
- Vegan: Use marinated tofu instead of feta.
- Extra heat: Add a pinch of red pepper flakes or a whole dried chili.
- More citrus punch: Add a bit of grapefruit zest for a twist.
