Air-Fryer Spinach Stuffed Pastry

Ingredients:

  • 1 package puff pastry sheets (thawed if frozen)
  • 2 cups fresh spinach leaves (or 1 cup frozen spinach, thawed and drained)
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup feta cheese, crumbled
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 egg (for egg wash)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: a pinch of nutmeg

Instructions:

  1. Preparation:
    • Preheat your air fryer to 375°F (190°C).
  2. Prepare the Filling:
    • Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
    • Add the fresh spinach leaves to the skillet and cook until wilted, about 2-3 minutes. If using frozen spinach, ensure it is well-drained before adding.
    • Remove from heat and let cool slightly.
    • In a mixing bowl, combine the cooked spinach mixture, ricotta cheese, Parmesan cheese, and feta cheese. Season with salt, pepper, and a pinch of nutmeg (if using). Mix well.
  3. Prepare the Pastry:
    • Roll out the puff pastry sheets on a lightly floured surface. Cut into squares or rectangles, depending on your desired size of pastries.
    • Place a spoonful of the spinach and cheese mixture in the center of each pastry square.
    • Fold the pastry over the filling to create a pocket, pressing the edges together to seal. You can use a fork to crimp the edges for a decorative touch.
  4. Egg Wash:
    • In a small bowl, beat the egg. Brush the tops of the pastries with the egg wash to give them a golden, glossy finish.
  5. Air Fry:
    • Place the stuffed pastries in a single layer in the air fryer basket. You may need to cook them in batches to avoid overcrowding.
    • Air fry for 10-12 minutes or until the pastries are golden brown and crispy.
  6. Cool and Serve:
    • Remove the pastries from the air fryer and let them cool slightly before serving.
  7. Enjoy:
    • Serve warm as an appetizer, snack, or part of a meal.
