Air-Fryer Spinach Stuffed Pastry
Ingredients:
- 1 package puff pastry sheets (thawed if frozen)
- 2 cups fresh spinach leaves (or 1 cup frozen spinach, thawed and drained)
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup feta cheese, crumbled
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 egg (for egg wash)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: a pinch of nutmeg
Instructions:
- Preparation:
- Preheat your air fryer to 375°F (190°C).
- Prepare the Filling:
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the fresh spinach leaves to the skillet and cook until wilted, about 2-3 minutes. If using frozen spinach, ensure it is well-drained before adding.
- Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked spinach mixture, ricotta cheese, Parmesan cheese, and feta cheese. Season with salt, pepper, and a pinch of nutmeg (if using). Mix well.
- Prepare the Pastry:
- Roll out the puff pastry sheets on a lightly floured surface. Cut into squares or rectangles, depending on your desired size of pastries.
- Place a spoonful of the spinach and cheese mixture in the center of each pastry square.
- Fold the pastry over the filling to create a pocket, pressing the edges together to seal. You can use a fork to crimp the edges for a decorative touch.
- Egg Wash:
- In a small bowl, beat the egg. Brush the tops of the pastries with the egg wash to give them a golden, glossy finish.
- Air Fry:
- Place the stuffed pastries in a single layer in the air fryer basket. You may need to cook them in batches to avoid overcrowding.
- Air fry for 10-12 minutes or until the pastries are golden brown and crispy.
- Cool and Serve:
- Remove the pastries from the air fryer and let them cool slightly before serving.
