Stuffed Buns Recipe
These soft, spongy buns with a slight sweet note perfectly complement a spicy filling, making them ideal for lunch or a satisfying snack.
Ingredients
For the Dough:
- 3 cups (375g) all-purpose flour
- 2 tsp instant yeast
- 3 tbsp sugar
- 1 tsp salt
- 1/2 cup (120ml) warm milk
- 1/4 cup (60ml) warm water
- 3 tbsp butter (melted) or oil
- 1 large egg (optional, for a richer dough)
For the Filling:
- 1 cup cooked and shredded chicken, beef, or paneer (optional: replace with sautéed vegetables for a vegetarian option)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 small bell pepper, finely diced
- 1/2 cup boiled and mashed potatoes
- 1/2 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 tsp garam masala or all-purpose seasoning
- Salt to taste
- 1 tbsp oil
- Fresh coriander (cilantro), chopped
For Brushing:
- 1 egg yolk mixed with 1 tbsp milk (for a golden top) or melted butter (for a soft finish)
Instructions
Step 1: Prepare the Dough
- In a large bowl, combine warm milk, warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
- Add flour, salt, and melted butter to the yeast mixture. If using an egg, mix it in at this stage. Knead the dough for 8-10 minutes until soft and elastic.
- Cover the dough with a damp cloth or plastic wrap and let it rise in a warm place for 1-1.5 hours or until it doubles in size.
Step 2: Prepare the Filling
- Heat oil in a pan over medium heat. Add onions and garlic; sauté until translucent.
- Add the bell pepper and cook for 2-3 minutes.
- Stir in the turmeric powder, red chili powder, and garam masala. Mix well.
- Add the shredded chicken (or alternative protein) and mashed potatoes. Cook for 2-3 minutes, ensuring everything is well combined.
- Season with salt and garnish with fresh coriander. Allow the mixture to cool.
Step 3: Shape and Stuff the Buns
- Once the dough has risen, punch it down to release air. Divide it into 8-10 equal portions.
- Flatten each portion into a small disc and place a spoonful of filling in the center. Gather the edges and seal the bun tightly.
- Place the stuffed buns seam-side down on a greased baking tray, leaving space for them to rise. Cover and let them rise for another 30 minutes.
Step 4: Bake the Buns
- Preheat your oven to 375°F (190°C).
- Brush the buns with the egg wash or melted butter.
- Bake for 18-20 minutes, or until the buns are golden brown.
