Ingredients:

For the dough:

  • 2 cups (250g) all-purpose flour
  • 2 tablespoons butter (room temperature)
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup (120ml) warm water
  • 1 teaspoon vinegar

For the filling:

  • 1 cup (250g) ricotta cheese
  • 1/2 cup raisins (soaked in warm water for 10 minutes)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

For frying:

  • Vegetable oil

For dusting:

  • Powdered sugar

Instructions:

  1. Prepare the dough:
    • In a large bowl, mix the flour, salt, and sugar.
    • Add butter and mix with your fingers until it forms a crumbly texture.
    • Gradually add warm water and vinegar, kneading until you get a smooth dough.
    • Cover with a cloth and let it rest for 30 minutes.
  2. Make the filling:
    • In a bowl, mix ricotta, drained raisins, sugar, vanilla extract, and cinnamon (if using).
    • Stir well until smooth.
  3. Assemble the pastries:
    • Roll out the dough thinly on a floured surface.
    • Cut into circles (about 3-4 inches in diameter).
    • Place a spoonful of filling in the center of each.
    • Fold in half and press the edges with a fork to seal.
  4. Fry the pastries:
    • Heat vegetable oil in a deep pan over medium heat.
    • Fry the pastries until golden brown on both sides.
    • Remove and drain on paper towels.
  5. Serve:
    • Sprinkle with powdered sugar and enjoy warm!
