Instructions:

  1. Soak Tapioca:
    • Rinse the tapioca pearls under cold water. In a bowl, soak the tapioca pearls in water for at least 30 minutes or according to package instructions.
  2. Cook Tapioca:
    • After soaking, drain the tapioca pearls. In a saucepan, bring 2 cups of water to a boil. Add the drained tapioca pearls and cook over medium heat. Stir occasionally to prevent sticking. Cook until the tapioca pearls become translucent, which usually takes about 15-20 minutes.
  3. Prepare Coconut Milk Mixture:
    • In another saucepan, combine the coconut milk, sugar, and salt. Heat the mixture over medium heat, stirring until the sugar is dissolved. Do not bring it to a boil.
  4. Combine Tapioca and Coconut Milk:
    • Once the tapioca pearls are cooked, drain any excess water. Add the cooked tapioca to the coconut milk mixture. Stir well and let it simmer for an additional 10-15 minutes until the mixture thickens slightly. Adjust the sweetness if necessary.
  5. Cool the Mixture:
    • Remove the saucepan from heat and let the tapioca mixture cool to room temperature. You can refrigerate it for faster cooling.
  6. Prepare Mangoes:
    • Peel, pit, and dice the ripe mangoes into small cubes.
  7. Assemble the Dessert:
    • In serving glasses or bowls, layer the tapioca and coconut mixture with diced mangoes. Repeat the layers until the glasses are filled.
  8. Chill:
    • Refrigerate the mango tapioca dessert for at least 2 hours before serving.
  9. Garnish and Serve:
