PREPARATION:

Step 1: Prepare Your Ingredients

Begin by cutting both the Velveeta cheese and cream cheese into small cubes. This will help them melt evenly and incorporate smoothly into the dip. Drain the Rotel diced tomatoes with chilies, reserving the liquid if desired for added moisture later.

Pro Tip: For easier handling, let the cheeses sit at room temperature for about 10–15 minutes before cutting.


Step 2: Cook the Cheese Mixture

In a large saucepan or slow cooker, combine the cubed Velveeta cheese, cream cheese, and heavy whipping cream. Over medium-low heat, stir continuously until the cheeses are fully melted and the mixture is smooth and creamy. Be patient—this may take about 10–15 minutes, depending on your heat source.

Tip: If using a slow cooker, set it to low and cook for 1–2 hours, stirring occasionally.


Step 3: Add the Tomatoes

Once the cheese mixture is fully melted and creamy, stir in the drained Rotel diced tomatoes with chilies. Mix well to distribute the tomatoes evenly throughout the dip. Allow the dip to simmer gently for an additional 5–10 minutes to meld the flavors.

Optional Variation: For extra spice, reserve some of the Rotel juice and stir in a tablespoon or two for added heat.

Step 4: Serve Warm

Transfer the Espinaca Dip to a serving dish and keep it warm using a mini crockpot or chafing dish if serving at a party. Garnish with chopped fresh cilantro or green onions for a pop of color and freshness.

Serve alongside plenty of fresh tortilla chips, sliced veggies, or crispy crackers for dipping. It also makes a fantastic topping for nachos or baked potatoes!
