Italian Stuffed Cabbage Rolls

These Italian Stuffed Cabbage Rolls are a comforting homemade meal made with tender cabbage leaves wrapped around a savory mixture of ground beef, Italian sausage, rice, Parmesan cheese, herbs, and garlic. The rolls are slowly baked in a rich tomato sauce until the cabbage is tender and the filling is juicy and flavorful.

They are hearty, satisfying, and perfect for a family dinner. You can prepare them ahead of time, making this recipe especially convenient for busy weeknights or Sunday family meals.

Ingredients

For the Cabbage Rolls

  • 1 large green cabbage
  • 1 lb (450 g) ground beef
  • 1/2 lb (225 g) Italian sausage, casings removed
  • 1 cup cooked white rice
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional

For the Tomato Sauce

  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 28 oz (800 g) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sugar, optional
  • 1/2 cup beef or chicken broth

For Topping

  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • Fresh parsley or basil, for garnish

Instructions

1. Prepare the Cabbage

Bring a large pot of salted water to a boil.

Carefully remove the core from the cabbage. Place the whole cabbage into the boiling water and cook for about 2–3 minutes.

As the outer leaves become soft and flexible, carefully remove them with tongs and place them on a plate or baking sheet.

Continue cooking and removing the leaves until you have about 12–14 good-sized leaves.

If the thick center rib of the leaves feels difficult to roll, carefully trim a small amount from the thickest part with a sharp knife. Be careful not to cut through the leaf.

Set the cabbage leaves aside to cool.

2. Make the Tomato Sauce

Heat the olive oil in a saucepan over medium heat.

Add the diced onion and cook for 3–4 minutes, until softened. Add the minced garlic and cook for another 30 seconds.

Stir in the crushed tomatoes, tomato paste, Italian seasoning, oregano, salt, black pepper, and optional sugar.

Pour in the broth and stir well.

Allow the sauce to simmer gently for 10–15 minutes, stirring occasionally.

Taste and adjust the seasoning if necessary.

3. Prepare the Filling

In a large mixing bowl, combine:

  • Ground beef
  • Italian sausage
  • Cooked rice
  • Diced onion
  • Minced garlic
  • Egg
  • Parmesan cheese
  • Fresh parsley
  • Italian seasoning
  • Oregano
  • Salt
  • Black pepper
  • Red pepper flakes, if using

Mix gently with your hands or a large spoon until everything is evenly combined.

Do not overmix the filling, as this can make the meat tough.

4. Assemble the Cabbage Rolls

Preheat your oven to 375°F (190°C).

Spread about 1 cup of the tomato sauce across the bottom of a large baking dish.

Take one cabbage leaf and place approximately 2–3 tablespoons of the filling near the bottom center of the leaf.

Fold the sides of the cabbage leaf toward the center, then roll it tightly from the bottom upward, similar to making a burrito.

Place the cabbage roll seam-side down in the baking dish.

Repeat with the remaining cabbage leaves and filling.

Arrange the rolls snugly next to each other.

5. Add the Sauce

Pour the remaining tomato sauce over the cabbage rolls, making sure they are well covered.

Cover the baking dish tightly with aluminum foil.

6. Bake

Place the covered dish in the preheated oven and bake for approximately 50–60 minutes, or until the cabbage is tender and the filling is completely cooked.

For food safety, the center of the meat filling should reach 160°F (71°C).

7. Add the Cheese

Remove the aluminum foil.

Sprinkle the mozzarella and Parmesan over the top.

Return the dish to the oven uncovered and bake for another 8–10 minutes, or until the cheese is melted and lightly golden.

For a more browned cheese topping, you can place the dish under the broiler for 1–2 minutes. Watch it carefully because the cheese can brown quickly.

8. Rest and Serve

Remove the cabbage rolls from the oven and let them rest for about 10 minutes before serving.

Garnish with fresh parsley or basil and an extra sprinkle of Parmesan cheese.

Serve warm with plenty of the tomato sauce spooned over the top.

Tips for the Best Italian Stuffed Cabbage Rolls

Use a combination of meats: Ground beef gives the filling a hearty flavor, while Italian sausage adds extra seasoning and richness.

Don’t overcook the cabbage: The leaves only need to become flexible enough to roll. They will continue cooking in the oven.

Cook the rice first: Using cooked rice makes the filling easier to prepare and helps ensure the rice has the right texture.

Don’t overfill the leaves: A few tablespoons of filling is usually enough. Overfilling can cause the rolls to split while baking.

Let them rest: Allowing the cabbage rolls to rest for several minutes after baking helps the filling settle and makes them easier to serve.

Make-Ahead Instructions

You can assemble the cabbage rolls up to 24 hours in advance.

Prepare the rolls and arrange them in the baking dish with the tomato sauce. Cover tightly and refrigerate.

When ready to cook, remove the dish from the refrigerator and allow it to sit at room temperature for about 20–30 minutes before baking.

You may need to add a few extra minutes to the baking time because the rolls will be chilled.

Storage

Store leftover cabbage rolls in an airtight container in the refrigerator for up to 3–4 days.

The rolls can also be frozen. Allow them to cool completely, then place them in a freezer-safe container with some tomato sauce.

Freeze for up to 3 months.

Thaw overnight in the refrigerator and reheat in a covered baking dish until heated through.

Frequently Asked Questions

Can I use ground turkey instead of beef?

Yes. Ground turkey can be substituted for the ground beef. The filling will be slightly lighter, but the Italian sausage will still provide plenty of flavor.

Can I make these without rice?

Yes. You can replace the rice with cooked quinoa or simply leave it out. If you omit the rice, slightly reduce the amount of filling placed inside each cabbage leaf.

Can I use Savoy cabbage?

Absolutely. Savoy cabbage has tender, flexible leaves and works very well for stuffed cabbage rolls.

Can I make them vegetarian?

Yes. Replace the meat with a mixture of cooked lentils, mushrooms, chopped vegetables, Parmesan, and rice. Adjust the seasoning to taste.

Why are my cabbage rolls falling apart?

The leaves may not have been softened enough, or they may have been overfilled. Make sure the cabbage leaves are flexible and avoid putting too much filling inside each roll.

Can I prepare them in advance?

Yes. They can be assembled a day ahead and kept covered in the refrigerator until you’re ready to bake them.

Final Thoughts

These Italian Stuffed Cabbage Rolls are the kind of meal that turns simple ingredients into something truly comforting. Tender cabbage, savory meat, creamy Parmesan, fluffy rice, and rich tomato sauce come together in every bite.

They’re perfect for family dinners, weekend cooking, meal preparation, or whenever you’re craving a warm and satisfying homemade Italian-inspired meal.
