Crispy Cheesy Potato Fritters 🥔🧀
Ingredients
- 3 medium potatoes, peeled
- 1 cup shredded mozzarella or cheddar cheese
- 1 egg
- 3 tbsp all-purpose flour
- 2 tbsp breadcrumbs
- 2 tbsp chopped green onions or parsley
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and black pepper, to taste
- Oil, for frying
Instructions
- Cook the potatoes: Boil the potatoes until fork-tender, about 15–20 minutes. Drain and mash until smooth.
- Make the mixture: Let the potatoes cool slightly, then mix with cheese, egg, flour, breadcrumbs, green onions, garlic powder, paprika, salt, and pepper.
- Shape: Scoop out portions and flatten them into small fritters.
- Fry: Heat a thin layer of oil in a skillet over medium heat. Cook the fritters for about 3–4 minutes per side, until golden brown and crispy.
- Drain & serve: Place on paper towels to remove excess oil. Serve hot while the cheese is still melty.

For extra-crispy fritters, refrigerate the shaped patties for 15–20 minutes before frying.
Serving idea: Pair them with garlic mayo, sour cream, ranch, or a spicy dipping sauce.
