🍪 Nut and Oat Cookies (Air Fryer Recipe)

Ingredients

  • 1 cup rolled oats

  • ½ cup mixed nuts (almonds, walnuts, cashews — chopped)

  • ½ cup all-purpose flour (or almond flour for gluten-free)

  • ⅓ cup brown sugar (or coconut sugar)

  • ¼ teaspoon salt

  • ½ teaspoon cinnamon (optional)

  • ¼ cup melted butter (or coconut oil)

  • 2 tablespoons honey (or maple syrup)

  • 1 egg (or flaxseed substitute for vegan: 1 tbsp flaxseed + 3 tbsp water)

  • ½ teaspoon vanilla extract

Instructions

  1. Mix dry ingredients: In a bowl, combine oats, nuts, flour, sugar, salt, and cinnamon.

  2. Add wet ingredients: Stir in melted butter, honey, egg, and vanilla. Mix until evenly combined.

  3. Shape cookies: Scoop 1–2 tablespoons of dough, shape into small discs (they’ll spread a little).

  4. Preheat air fryer: 160°C (320°F) for 3–5 minutes.

  5. Air fry: Place cookies on parchment paper or a lightly greased tray.

    • Temperature: 160°C (320°F)

    • Time: 8–10 minutes, until golden brown.

  6. Cool: Let them cool in the basket for 5 minutes, then transfer to a rack — they’ll crisp up as they cool.

Tips

  • Add raisins or dark chocolate chips for extra flavor.

  • Don’t overcrowd the air fryer — bake in batches if needed.

  • Store in an airtight container up to 5 days.
