Air Fryer Beef Liver and Onions

If you love classic beef liver and onions but want a quicker and easier way to prepare it, this Air Fryer Beef Liver and Onions recipe is a great option. The air fryer cooks the liver quickly while helping the onions become tender and lightly caramelized.

Ingredients

  • 1 lb (450 g) beef liver
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour, optional
  • Fresh parsley, for garnish

Instructions

1. Prepare the Liver

Rinse the beef liver briefly under cold water and pat it completely dry with paper towels.

If the liver has a tough membrane or connective tissue, carefully remove it. Cut the liver into slices about ¼ to ½ inch thick.

For a milder flavor, you can soak the liver in milk for 20–30 minutes before cooking. Drain and pat it dry before seasoning.

2. Season the Liver

Place the liver slices in a bowl. Add olive oil, garlic powder, paprika, salt, black pepper, and dried thyme.

Toss gently until the liver is evenly coated.

If you prefer a slightly crispier exterior, lightly dust the liver with flour before placing it in the air fryer.

3. Prepare the Onions

Slice the onion into thin strips.

Toss the onions with a little olive oil and place them in the air fryer basket.

4. Air Fry the Onions

Preheat the air fryer to 375°F (190°C).

Cook the onions for about 5–7 minutes, shaking the basket halfway through.

5. Add the Liver

Place the seasoned liver slices over or alongside the onions. Add small pieces of butter over the liver.

Air fry at 375°F (190°C) for approximately 7–10 minutes, flipping the liver halfway through.

The exact cooking time will depend on the thickness of the liver slices and your air fryer.

6. Check for Doneness

Beef liver should be cooked thoroughly. For food safety, check the thickest piece with a food thermometer and make sure it reaches 160°F (71°C).

Avoid overcooking, however, because liver can become dry and tough very quickly.

7. Serve

Transfer the liver and onions to a serving plate. Sprinkle with fresh parsley and serve immediately.

What to Serve With Air Fryer Beef Liver and Onions

This dish pairs especially well with:

  • Mashed potatoes
  • French fries
  • Steamed rice
  • Roasted vegetables
  • Green beans
  • Creamy mashed cauliflower
  • Crusty bread
  • Simple green salad

Tips for Tender Beef Liver

  • Don’t overcook it: Liver becomes tough when cooked for too long.
  • Pat it dry: Removing excess moisture helps the liver brown better.
  • Slice evenly: Similar thickness ensures the pieces cook at the same rate.
  • Soak in milk: This can help reduce the strong flavor and make the liver more appealing to people who don’t usually enjoy it.
  • Don’t overcrowd the basket: Leave space around the liver so hot air can circulate properly.

Frequently Asked Questions

Can I cook frozen beef liver in the air fryer?

Yes, but thawing the liver first is recommended for more even cooking. Frozen pieces can cook unevenly, especially if they are thick.

How long does beef liver take in an air fryer?

Thin slices generally take around 7–10 minutes at 375°F (190°C), depending on the air fryer and thickness. Always verify that the center reaches 160°F (71°C).

Can I cook the onions and liver together?

Yes. Starting the onions a few minutes before adding the liver gives them extra time to soften and brown without overcooking the liver.

Can I use chicken liver instead?

Yes. Chicken liver can also be prepared in an air fryer, although the cooking time will usually be shorter because the pieces are smaller.
