Total Time: 50–55 minutes
Servings: 4–6

📝 Ingredients:

  • 3–4 medium potatoes, peeled and diced
  • 4–5 hotdogs, sliced into small rounds
  • 6 large eggs
  • ½ cup milk
  • 1 cup shredded cheese (cheddar or any melty cheese)
  • 1 small onion, finely chopped (optional)
  • 2 tablespoons butter or oil
  • Salt and pepper to taste
  • Optional: chopped parsley, paprika, or chili flakes for extra flavor

👩‍🍳 Step-by-Step Instructions:

✅ Step 1: Preheat Oven

  • Preheat your oven to 375°F (190°C).
  • Grease a medium baking dish (around 9×9 inches or similar).

✅ Step 2: Cook the Potatoes

  • In a skillet, heat butter or oil over medium heat.
  • Add diced potatoes and cook for 8–10 minutes, stirring often, until slightly soft and golden.
  • Add chopped onion (if using) and cook another 2 minutes.

  • Stir in the sliced hotdogs and cook for another 2–3 minutes until lightly browned.
  • Remove from heat and spread the mixture evenly into your prepared baking dish.

✅ Step 4: Mix Eggs & Cheese

  • In a mixing bowl, whisk together the eggs, milk, salt, pepper, and half the shredded cheese.
  • Pour the egg mixture evenly over the potato-hotdog layer in the baking dish.

✅ Step 5: Bake

  • Sprinkle the remaining cheese on top.
  • Bake uncovered for 25–30 minutes, or until the eggs are set and the top is golden brown.

✅ Step 6: Cool and Serve

  • Let the casserole cool for about 5 minutes before slicing.
  • Garnish with parsley or paprika if desired.
  • Serve warm!

🍽️ Tips:

  • You can prep the casserole the night before and bake in the morning.
  • Add diced bell peppers or mushrooms for more veggies.
