Ciabatta bread

Classic Ciabatta Bread Recipe

Ingredients:

  • 4 cups (500g) all-purpose flour
  • 1 ½ tsp salt
  • 1 ½ tsp sugar
  • 1 tsp active dry yeast
  • 1 ½ cups (360ml) warm water (around 110°F/45°C)
  • 2 tbsp olive oil

Instructions:

  1. Prepare the Dough:
    • Dissolve the yeast in ½ cup of warm water with the sugar. Let it sit for about 5-10 minutes until it becomes foamy.
    • In a large mixing bowl, combine the flour and salt.
    • Add the yeast mixture, the remaining warm water, and olive oil to the flour mixture. Mix until a sticky dough forms.
  2. First Rise:
    • Transfer the dough to a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  3. Shape the Dough:
    • Gently turn the dough onto a well-floured surface. Avoid overworking it to preserve the air bubbles.
    • Divide the dough into two or three pieces, shaping each into an oval or rectangle. Place the loaves on a parchment-lined baking sheet.
  4. Second Rise:
    • Cover the loaves with a clean kitchen towel and let them rest for 30-40 minutes.
  5. Preheat the Oven:
    • Preheat your oven to 450°F (230°C). Place a baking stone or an inverted baking sheet in the oven to heat. Position a shallow pan on the bottom rack for steam.
  6. Bake:
    • Transfer the loaves onto the preheated baking stone or sheet using a parchment paper sling.
    • Pour a cup of water into the shallow pan to create steam, then quickly close the oven door.
    • Bake for 20-25 minutes, or until the loaves are golden brown and sound hollow when tapped.
  7. Cool and Serve:
    • Allow the bread to cool on a wire rack before slicing.
