Classic Ciabatta Bread Recipe
Ingredients:
- 4 cups (500g) all-purpose flour
- 1 ½ tsp salt
- 1 ½ tsp sugar
- 1 tsp active dry yeast
- 1 ½ cups (360ml) warm water (around 110°F/45°C)
- 2 tbsp olive oil
Instructions:
- Prepare the Dough:
- Dissolve the yeast in ½ cup of warm water with the sugar. Let it sit for about 5-10 minutes until it becomes foamy.
- In a large mixing bowl, combine the flour and salt.
- Add the yeast mixture, the remaining warm water, and olive oil to the flour mixture. Mix until a sticky dough forms.
- First Rise:
- Transfer the dough to a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
- Shape the Dough:
- Gently turn the dough onto a well-floured surface. Avoid overworking it to preserve the air bubbles.
- Divide the dough into two or three pieces, shaping each into an oval or rectangle. Place the loaves on a parchment-lined baking sheet.
- Second Rise:
- Cover the loaves with a clean kitchen towel and let them rest for 30-40 minutes.
- Preheat the Oven:
- Preheat your oven to 450°F (230°C). Place a baking stone or an inverted baking sheet in the oven to heat. Position a shallow pan on the bottom rack for steam.
- Bake:
- Transfer the loaves onto the preheated baking stone or sheet using a parchment paper sling.
- Pour a cup of water into the shallow pan to create steam, then quickly close the oven door.
- Bake for 20-25 minutes, or until the loaves are golden brown and sound hollow when tapped.
- Cool and Serve:
- Allow the bread to cool on a wire rack before slicing.
