Air Fryer Crème Brûlée Recipe

Ingredients

  • 1 cup (240ml) heavy cream
  • 3 large egg yolks
  • ¼ cup (50g) granulated sugar (plus more for topping)
  • 1 tsp pure vanilla extract
  • Pinch of salt

Equipment

  • 4 small ramekins (4-6 oz each)
  • Aluminum foil
  • Air fryer
  • Kitchen torch (optional, for caramelizing)

Instructions

1. Prepare the Custard:

  1. In a small saucepan, heat the heavy cream over medium heat until it begins to steam but does not boil.
  2. In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, and salt until combined.
  3. Gradually add the warm cream to the egg mixture, a little at a time, whisking constantly to avoid scrambling the eggs.

2. Fill the Ramekins:

  1. Strain the custard mixture through a fine mesh sieve to remove any lumps.
  2. Divide the custard evenly among the ramekins.
  3. Cover each ramekin tightly with aluminum foil to prevent condensation from forming on the surface.

3. Cook in the Air Fryer:

  1. Preheat your air fryer to 300°F (150°C) for 3 minutes.
  2. Place the ramekins in the air fryer basket, ensuring they are evenly spaced.
  3. Cook for 25-30 minutes, or until the custards are set around the edges but still slightly jiggly in the center.
  4. Carefully remove the ramekins from the air fryer and let them cool to room temperature. Then refrigerate for at least 2 hours or until fully chilled.

4. Caramelize the Sugar Topping:

  1. Sprinkle 1-2 teaspoons of granulated sugar evenly over the top of each chilled custard.
  2. Use a kitchen torch to caramelize the sugar until it melts and forms a golden, crispy layer. Alternatively, you can place the ramekins under a broiler for 1-2 minutes, watching closely to prevent burning.

5. Serve:
Let the caramelized topping cool and harden for a minute before serving. Enjoy the creamy custard with the satisfying crunch of caramelized sugar on top!

Tips:

  • Ensure the custards are fully chilled before caramelizing for the best texture.
  • If using the broiler, place the ramekins on a baking sheet for easier handling.
  • Experiment with flavored extracts like almond or orange for a twist.
