Ingredients

- 3 large egg yolks

Instructions
1. Prepare the Custard:
- In a small saucepan, heat the heavy cream over medium heat until it begins to steam but does not boil.
- In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, and salt until combined.
- Gradually add the warm cream to the egg mixture, a little at a time, whisking constantly to avoid scrambling the eggs.
2. Fill the Ramekins:
- Strain the custard mixture through a fine mesh sieve to remove any lumps.
- Divide the custard evenly among the ramekins.
- Cover each ramekin tightly with aluminum foil to prevent condensation from forming on the surface.
3. Cook in the Air Fryer:
- Preheat your air fryer to 300°F (150°C) for 3 minutes.
- Place the ramekins in the air fryer basket, ensuring they are evenly spaced.
- Cook for 25-30 minutes, or until the custards are set around the edges but still slightly jiggly in the center.
- Carefully remove the ramekins from the air fryer and let them cool to room temperature. Then refrigerate for at least 2 hours or until fully chilled.
4. Caramelize the Sugar Topping:
- Sprinkle 1-2 teaspoons of granulated sugar evenly over the top of each chilled custard.
- Use a kitchen torch to caramelize the sugar until it melts and forms a golden, crispy layer. Alternatively, you can place the ramekins under a broiler for 1-2 minutes, watching closely to prevent burning.
5. Serve:
