Apple Raisin Bundt Cake

Here’s a recipe for making an Apple Raisin Bundt Cake in an air fryer:

Ingredients:

  • For the Cake:
    • 1 ¾ cups (220g) all-purpose flour
    • 1 tsp baking powder
    • ½ tsp baking soda
    • 1 tsp ground cinnamon
    • ½ tsp ground nutmeg
    • ¼ tsp salt
    • ½ cup (120ml) vegetable oil or melted butter
    • ¾ cup (150g) granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • ½ cup (120ml) buttermilk or milk
    • 1 ½ cups (2 medium) peeled and finely diced apples
    • ½ cup (80g) raisins (soaked in warm water for 10 minutes and drained)
  • For Topping (Optional):
    • Powdered sugar for dusting
    • A drizzle of caramel sauce or cream cheese glaze

Instructions:

  1. Prepare the Bundt Pan:
    • Grease a small Bundt pan that fits in your air fryer. Sprinkle lightly with flour to prevent sticking.
  2. Mix Dry Ingredients:
    • In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. Mix Wet Ingredients:
    • In another bowl, whisk together the vegetable oil (or melted butter) and sugar until smooth. Add the eggs, one at a time, whisking well after each addition. Mix in the vanilla extract.
  4. Combine Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Start and end with the dry ingredients. Do not overmix.
    • Fold in the diced apples and drained raisins gently with a spatula.
  5. Pour into the Bundt Pan:
    • Pour the batter evenly into the prepared Bundt pan, filling it about 2/3 full.
  6. Preheat the Air Fryer:
    • Preheat the air fryer to 325°F (165°C) for 3–5 minutes.
  7. Bake the Cake:
    • Place the Bundt pan into the air fryer basket. Air fry at 325°F (165°C) for 30–40 minutes or until a toothpick inserted into the center comes out clean.
    • Check halfway through and cover the top with aluminum foil if it’s browning too quickly.
  8. Cool and Remove:
    • Let the cake cool in the pan for 10–15 minutes before turning it out onto a wire rack. Allow it to cool completely.
  9. Decorate and Serve:
    • Dust with powdered sugar or drizzle with your favorite glaze before serving.

Tips:

  • Ensure your Bundt pan fits in the air fryer.
  • Adjust cooking time based on your air fryer model. Test for doneness with a toothpick.
  • Replace raisins with nuts or other dried fruits if preferred.
