Ingredients:
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
Instructions:
- Preheat your air fryer to 325°F (160°C) for 5 minutes.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined. Do not overmix.
- Grease a 7-inch round cake pan and pour the batter into it, smoothing the top with a spatula.
- Place the cake pan into the preheated air fryer basket. Cook for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Once cooked, carefully remove the cake from the air fryer and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.
- Slice and serve the buttermilk pound cake on its own or with your favorite toppings like whipped cream, fresh berries, or a dusting of powdered sugar.
